[Error: unknown template qotd]I actually have two special recipes... From my maternal grandmother. They are both delicious! One is for Swedish waffles. And one is for mudcake muffins.

In Sweden it's tradition to eat waffles at the Feast of the Annunciation. It's a bit of a long history behind it, but here in Sweden that day is now known as Waffelday. And everyone eats waffles. So I always make grandma's waffles then serving them with jam and whipped cream and/or vanilla icecream. It's SOOOO tasty!

Then there's the mudcake muffins. When I was a kid grandma made these A LOT. And she always called them gooey or gunky muffins. *lol* Because well they kinda are, what with having the same texture/consistency as mudcakes do. They are SO easy to make! So if I have a craving for candy or something sweet or I am about to get a visitor and want to have something with our coffee/tea, I whip these up. Yum, yum!

The recipes do use the metric system, that is deciliters and not cups. Tablespoon and teaspoon is the same thing though. I have used the site Online Conversion.Com to convert the measurements, but it might be good to know that I had to do so. I did my best!

KSena's Grandma's Swedish Waffles

2 eggs
4 deciliters (1,69 cups) of milk
4 tablespoons of sugar
1 teaspoon salt
4 ½ deciliters (1,9 cups) of flour
2 teaspoons of baking powder
1 deciliter (0,42 cup) melted butter (approximately 100 grams (3,5 ounce))

Mix all the ingredients thoroughly, preferably with an electric mixer so the batter is smooth. Then cook in a waffle iron until golden. Serve with jam and whipped cream and/or vanilla icecream!


KSena's Grandma's Mudcake Muffins

4 eggs
5 deciliters (2,11 cups) of sugar
3 deciliters (1,26 cups) of flour
6-7 tablespoons of cacao powder
4 teaspoons of vanilla sugar
200 grams (7,05 ounces) of melted butter
2 pinches of salt

Mix the dry ingredients first and then add the butter. Mix through preferably with an electric mixer until the batter is smooth. Pour in muffin molds. (I have molds like THESE. Big cupcake molds are to big!) Put the oven to 160 degrees Celsius (320 degrees Fahrenheit). Cook for 12-18 mins (varies depending on oven). They WILL fall down, so don't panic if they look all fluffy when take them out of the oven and then fall down when cooling. They're supposed to!

This batter makes 40 muffins. So I usually just do half of it, since 20 is plenty really.

So those I'll share today! Of course I have more recipes I've gotten from people. Like the delicious cold sauce my mom and aunt always do when they serve with the first potatoes of the summer that tastes so good! And the chocolate chip cookie recipe I got from the family I stayed at in Manchester, New Hampshire, USA. Or the wonderful pie recipe I got from my best friend [livejournal.com profile] spicehobbit who also gave me the kick ass recipe to pasty that I always use when going to summer LARP's... And the wonderful cake I got from my second cousin years ago... Well... I guess I have more recipes to share in the future. *lol*
